The idea behind Jean/Jan is to transmit our vision of the traditional cuisine of our countries, using only plant based products. In this, the creation of our menu is an exciting challenge. We need to break open traditions in order to reinvent them. The most important elements is that our customers, who are meat-eaters don't get the impression that they loose anything when we remove animal products from the menu. We provide the familiar emotions they are known with. This approach is the best to create new traditions. We believe when you take something away, the thing you replace it with must have the same value or even more. Why would you give up what you like already, unless you find something you like even better. As we like to say: This is not what you think it is, this is better.
